while it would be better to be able to change the value in the UPS directly here what you can do

mkdir /etc/e-smith/templates-custom//etc/ups/ups.conf/ -p

vim /etc/e-smith/templates-custom/etc/ups/ups.conf/UUPS

then add

override.battery.date = 2020/08/31

override.battery.mfr.date = 2020/01/01

then do

expand-template /etc/ups/ups.conf

service nut restart
